The Arboretum Stopped Being Your Backup Plan

The version of The Arboretum of South Barrington that most residents carry in their heads is roughly two years out of date. Cooper's Hawk on a Tuesday. Ruth's Chris for an anniversary. The cinema when nothing else was working. A perfectly functional set of options that never quite felt like a first choice.

That version is gone. Between October 2024 and January 2026, five restaurant and entertainment concepts opened at the Arboretum. The operators behind them are not suburban brands filling space vacated by someone else. They are Chicago hospitality veterans, and at least one of them was already your neighbor before the restaurant opened.

The claim here is not that the Arboretum "finally got good." It is that the conditions keeping it from being good changed: ownership instability, anchor tenant failures, a lineup assembled from whoever was available. Once those conditions changed, the operator quality followed. The result is a summer calendar worth actually planning around.


How a Foreclosure Produced a Better Lineup

The 600,000-square-foot open-air center defaulted on its construction loan, went through foreclosure, and changed ownership twice before Hoffman Estates-based Heidner Properties acquired it in 2022. That history matters because it explains the incentives. A center that has been through that kind of distress needs operators who will commit, not brands road-testing a suburban market.

The proof arrived in 2024, when Pinstripes filed for bankruptcy, closed ten of its eighteen locations nationally, and exited South Barrington. The footprint it left behind included bowling lanes, bocce courts, a full bar, and a restaurant kitchen. Heidner filled that space with 810 Entertainment, a company using South Barrington as the site of its first Midwest location and its sixteenth venue overall. That is not a distressed landlord accepting whoever called. That is a landlord with enough credibility to attract a company choosing its market entry point deliberately.

The detail that changes the meaning of Giostra is not Fabio Viviani's Food Network history. It is that Viviani and his family live in the area. The restaurant is named for a carousel in the Piazza della Repubblica in his hometown of Florence, the place his family visited when they could not afford much else. Giostra is not a suburban franchise extended from a Chicago address. It is a neighborhood restaurant that happens to be run by one of the more recognizable names in American Italian cooking, and it opened a short drive from his house.

The Greggory tells a parallel story through different biography. Gregg Horan spent his career as managing partner at Gibsons Restaurant Group. Bill Veremis ran Rosewood Steakhouse Group. Chef-partner José Sosa comes from Gibsons Italia. Their first independent project together is a 10,000-square-foot standalone building at the Arboretum, not a Lincoln Park address. The menu runs on live-fire technique: prime beef, fresh seafood, and housemade pastas prepared in an open kitchen. Weekend brunch service begins at 10:30am on Saturdays and Sundays, which is the least crowded window in their reservation calendar.

810 Entertainment occupies the footprint Pinstripes vacated and expands on it substantially. Twenty bowling lanes, three indoor bocce courts, billiards, sport simulators, krazy darts, and a feature called VERSE, an immersive augmented reality experience. The variety is wide enough that it functions as a full evening rather than a single activity. It is also immediately north of the main concert area, a detail that becomes relevant in June.


Why Wednesday Is the Organizing Principle

The 2026 Wickstrom Auto Group Summer Concert Series runs every Wednesday from June 17 through August 12 at the Main Street Plaza. It is free, runs from 6 to 9pm, and is sponsored by the Village of South Barrington. Severe weather sends the crowd to 810 Entertainment, directly north of the concert area.

The Sip and Shop arrangement is what makes the series more useful than a standard outdoor concert. Tangled Roots Brewing Company, The Hampton Social, Sim Racing, and Star Cinema Grill all serve food and drinks at the concerts. You are not choosing between the show and dinner. Low tables and chairs are permitted; full tents are not. Cash may be required at some vendors.

What a weekly free concert does that a one-time restaurant opening cannot is create a recurring reason to be at the Arboretum on a weekday evening. South Barrington residents have had Thursday farmers markets and Saturday morning routines for years. Wednesday evenings now have a default answer that did not exist last summer, and it anchors the rest of the Arboretum's new lineup in a way that benefits all of them.


A Practical Map for the Season

Wednesday concert nights are the anchor of the season. Arrive at 6pm with chairs, order from Tangled Roots or The Hampton Social, and stay through the set. The lineup this season runs from tribute acts to original bands, with the full schedule on the Arboretum's website. If weather forces the evening indoors, 810 is steps away and open late.

Saturday or Sunday brunch at The Greggory is the least-discovered window in the new lineup. The restaurant opens at 10:30am on weekends, which is before the dinner reservation pressure builds and before the parking lot fills. The live-fire program applies at brunch as well. It is also the most reliable answer to the question of where to take out-of-town guests who will ask why the suburbs have a kitchen this serious.

Giostra rewards a weekday reservation. The restaurant opens Monday through Thursday at 4pm, and the handmade pasta program, including a squash ravioli finished with amaretto crumble, is the reason to come. The wine list draws on Viviani's sourcing connections in Italy, which is a genuine differentiator from the Arboretum's legacy wine options.

810 Entertainment works as a before-concert warmup, an after-dinner extension, or a standalone plan for a group that does not want to manage reservations. The VERSE augmented reality experience is the item most worth previewing before you arrive, because the time slots book out on busy Fridays.

The Barrington Area TasteFest on October 21, 2026 at Wild Onion Brewery in Lake Barrington serves as the natural close of the season: the area's largest food and drink sampling event, pulling many of these same operators into a single evening. It often sells out, and tickets are available through the Barrington Area Chamber of Commerce.
